Mini Vietnamese crepes, also known as Bánh Khọt, are delicious bite-sized treats that bring a taste of Vietnam into your kitchen. Instructions:

1. Soak the Mung Beans:
- Rinse the mung beans under cold water.
- Place them in a bowl and cover with water. Let them soak for about 2 hours.
2. Prepare the Batter:
- In a mixing bowl, combine the white rice flour, corn flour, sugar, salt, and turmeric powder.
- Add the coconut milk slowly, whisking continuously to ensure a smooth mixture without lumps.
3. Cook the Shrimp:
- In a pan over medium heat, cook the shrimp until they turn pink and are fully cooked through. You can season them lightly with a pinch of salt if desired.
- Set the cooked shrimp aside.
4. Cook the Mung Beans:
- Drain the soaked mung beans.
- Place them in a pot with enough water to cover and cook over medium heat until tender, about 20 minutes. Drain and set aside.
5. Prepare the Filling:
- In a bowl, mix the cooked shrimp, cooked mung beans, and finely chopped red hot chili peppers. Set aside.
6. Prepare Pickled Carrots:
- In a small bowl, combine the vinegar and julienned carrots. Let them sit for at least 15 minutes.
7. Cook the Crepes:
- Heat a non-stick skillet or crepe pan over medium-high heat.
- Lightly grease the pan with a little oil.
- Pour a small ladleful of the batter into the pan, tilting it to spread evenly into a thin layer.
- Cook for about 2 minutes until the edges start to lift and the crepe is slightly crispy.
- Place a spoonful of the shrimp and mung bean mixture onto one half of the crepe.
- Fold the other half over to cover the filling and press down gently.
- Continue cooking for another minute until the crepe is golden and crispy.
- Transfer the crepe to a plate and repeat with the remaining batter and filling.
8. Serve:
- Serve the mini Vietnamese crepes hot, garnished with the pickled carrots on the side.
