3. Add the Sweet Potatoes:
- Toss the diced sweet potatoes into the skillet with the onions. Cook for about 10 minutes, stirring occasionally, until the sweet potatoes begin to soften and develop a bit of color.
4. Incorporate the Vegetables:
- Add the diced red pepper and minced garlic to the skillet. Cook for about 3 minutes, stirring frequently, until the garlic is fragrant.
- Stir in the diced zucchini and continue to cook for another 5-7 minutes, until all the vegetables are tender and well combined.
