The potato tortilla, also known as Spanish omelette, is a classic and hearty dish that combines simple ingredients to create layers of delicious flavors and textures. Ingredients:

Instructions:

1. Preparation:
- Peel and thinly slice the potatoes.
- Wash and chop the spinach.
- Chop the bacon strips into small pieces.
- Finely dice the onion.
- If using frozen broad beans, cook and shell them according to package instructions.
2. Cook the Bacon:
- In a large nonstick skillet, heat 1 teaspoon of olive oil over medium heat.
- Add the chopped bacon and cook until crispy. Remove the bacon from the skillet and set aside on paper towels to drain excess fat.
3. Cook the Potatoes and Onion:
- In the same skillet, add the remaining 1 teaspoon of olive oil.
- Add the sliced potatoes and diced onions. Cook for about 10 minutes, stirring occasionally until the potatoes are tender and the onions are caramelized.
4. Add the Spinach and Beans:
- Add the chopped spinach and cooked broad beans to the skillet.
- Stir the mixture and cook for another 3-4 minutes, until the spinach has wilted.
- Add the cooked bacon back to the skillet and mix well.
5. Prepare the Egg Mixture:
- In a medium bowl, whisk together the eggs.
- Add the low-fat cottage cheese to the eggs and mix until well combined.
- Season with salt and pepper to taste.
6. Combine and Cook the Tortilla:
- Pour the egg and cottage cheese mixture over the vegetable and bacon mixture in the skillet.
- Stir gently to ensure the egg mixture is evenly distributed.
- Reduce the heat to low and cook, without stirring, for about 10-15 minutes until the eggs are set and the bottom is golden brown.
7. Finish the Tortilla:
- Preheat the broiler to high.
- Place the skillet under the broiler for 2-3 minutes to cook the top of the tortilla until it's golden brown and fully set.
8. Serve:
- Remove the skillet from the broiler and let the tortilla cool for a few minutes.
