Profiterole cake is a decadent dessert that combines the rich flavors of dark and milk chocolate with the crunch of hazelnuts. This cake is perfect for special occasions or when you want to impress your guests with something truly unique. The light choux pastry filled with a creamy, chocolatey filling and topped with a luscious chocolate glaze makes for an irresistible treat.

Ingredients:

1/3 cup dark chocolate
72g
1/3 cup heavy whipping cream
72g
1/3 cup hazelnuts
40g
1/4 cup butter
54g
2/3 cup all-purpose white wheat flour
80g

1/2 cup dark chocolate
120g
1/2 cup milk chocolate
120g

Instructions:

1. Prepare the Chocolate Ganache:
- In a small saucepan, heat 1/3 cup heavy whipping cream over medium heat until it begins to simmer.
- Remove from heat and add 1/3 cup dark chocolate (72g). Stir until the chocolate is completely melted and smooth.
- Set aside to cool.
2. Toast the Hazelnuts:
- Preheat the oven to 350°F (175°C).
- Spread 1/3 cup hazelnuts (40g) on a baking sheet and toast in the oven for about 10 minutes or until golden and fragrant.
- Remove from oven, let cool, then chop coarsely. Set aside.
3. Make the Choux Pastry:
- In a medium saucepan, melt 1/4 cup butter (54g) over medium heat.
- Add 2/3 cup all-purpose flour (80g) all at once, and stir vigorously until the mixture forms a ball and pulls away from the sides of the pan.
- Transfer the dough to a mixing bowl and let it cool for a few minutes.
- Beat the 3 eggs (150g) one at a time into the dough, ensuring each egg is fully incorporated before adding the next.
- Spoon the dough into a piping bag fitted with a large round tip.
4. Bake the Choux Pastry:
- Preheat the oven to 375°F (190°C).
- Line a baking sheet with parchment paper.
- Pipe small mounds of dough (about the size of a tablespoon) onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 20-25 minutes, or until the profiteroles are puffed up and golden brown.
- Remove from the oven and let them cool completely on a wire rack.
5. Assemble the Profiterole Cake:
- Melt 1/2 cup dark chocolate (120g) and 1/2 cup milk chocolate (120g) together in a heatproof bowl over a pot of simmering water (double boiler method) until smooth.
- Dip each cooled profiterole into the melted chocolate mixture, coating them evenly. Let the excess chocolate drip off before placing them on a wire rack to set.
- Arrange the chocolate-coated profiteroles on a serving plate in a pyramid shape or in layers to form a cake-like structure.
- Drizzle the remaining chocolate ganache over the entire Profiterole Cake and sprinkle with the chopped toasted hazelnuts.
6. Chill and Serve:
- Refrigerate the Profiterole Cake for at least 30 minutes to allow the chocolate to set.
- Once set, slice and serve your elegant Profiterole Cake.
