This Roast Mushroom and Pork Bake is a delightful and hearty dish perfect for any dinner occasion. Combining succulent pork fillets, savory mushrooms, and the comforting flavors of potatoes and parmesan, this recipe is sure to satisfy your taste buds.

Instructions:

1. Preheat the Oven:
Preheat your oven to 400°F (200°C).
2. Prepare the Potatoes:
Place the cubed potatoes in a large pot of salted water. Bring to a boil and cook for 10 minutes, or until they're slightly tender but not fully cooked. Drain the potatoes well and set them aside.
3. Marinating the Pork:
In a small bowl, combine the lemon juice, minced garlic, mustard, and 1 tablespoon of olive oil. Mix well.
Pat the pork fillets dry with paper towels and season with salt and pepper. Brush the mustard mixture over the pork fillets, ensuring they are well-coated. Let the pork marinate while you prepare the vegetables.
4. Prepare the Vegetables:
In a large mixing bowl, combine the cubed potatoes, sliced mushrooms, and sliced shallots. Drizzle with 1 tablespoon of olive oil and season with salt and pepper to taste. Toss to coat evenly.
5. Assemble the Dish:
Spread the vegetable mixture evenly in a large baking dish. Place the marinated pork fillets on top of the vegetables.
