Instructions:

1. Preheat the Oven:

2. Prepare the Vegetables:
- Cut the cherry tomatoes in half.
- Thinly slice the red onion.

3. Roast the Vegetables:
- Spread the halved cherry tomatoes and sliced red onion on a baking tray.
- Spray lightly with cooking spray oil.
- Mince the garlic cloves and sprinkle over the tomatoes and onions.
- Sprinkle 1 teaspoon of sugar evenly over the vegetables.
- Roast in the preheated oven for 20-25 minutes until the tomatoes are soft and slightly caramelized, and the onions are tender.
4. Cook the Rice:
- Rinse the white rice under cold water until the water runs clear.
- In a medium saucepan, combine the rice with 2 cups of water (adjust according to package instructions if needed).
- Bring to a boil over medium heat. Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the water is absorbed.
- Remove from heat and let the rice cool slightly.
5. Toast the Pine Nuts:
- While the rice is cooking, place a small skillet over medium heat.
