Instructions:

1. Preparation:
- Press the tofu for at least 15 minutes to remove excess liquid. Crumble or cut into small cubes.
- Finely dice the carrots, red pepper, and onion.
- Mince the garlic and ginger.
- Thinly slice the cucumber.
2. Cooking the Vegetables:
- In a large non-stick skillet or wok, heat the vegetable broth over medium heat.
- Add the diced carrots, red pepper, and onion. Sauté for about 5-7 minutes until the vegetables begin to soften.
3. Adding Tofu:
- Incorporate the crumbled or cubed tofu into the skillet with the vegetables.
- Stir well to mix.
4. Seasoning:
- Add the minced garlic and ginger to the skillet. Stir and cook for another 2-3 minutes.
- Sprinkle in the turmeric powder, ground cumin, and chili powder. Mix thoroughly to coat the tofu and vegetables evenly.
- Pour in the teriyaki sauce and lime juice. Stir to combine all the ingredients.
5. Cooking and Simmering:
- Reduce the heat and let the mixture simmer for 5-10 minutes, stirring occasionally, until the flavors merge together.
- Add the chopped coriander leaves and a dash of salt. Mix well.
6. Assembling the Lettuce Wraps:
- Take the lettuce leaves and lay them out on a serving platter.
- Spoon the sofritas tofu mixture onto each lettuce leaf.
- Top with thinly sliced cucumber for extra crunch.

- Serve immediately while the sofritas tofu filling is warm.
