1 stalk celery
130g
3 garlic cloves
9g
1 tbsp ginger
5g
2 red hot chili peppers
90g
1 lb broccoli
450g
1.50 cups carrots
160g
1 cup red pepper
90g
1 onion
16g
1/3 cup soy sauce
100g
2 tbsp brown sugar
18g
2 tsp sesame seeds
6g

Instructions:

1. Prepare the Mung Beans:
- Rinse the mung beans under cold water until the water runs clear.
- In a pot, add the mung beans and cover them with water. Bring to a boil over medium-high heat.
- Reduce the heat and let the mung beans simmer for about 20-25 minutes or until they are tender but not mushy.
- Drain and set aside.
2. Prepare the Vegetables:
- Chop the 1/2 onion and the celery stalk.
- Mince the garlic cloves and grate or mince the ginger.
- Slice the red hot chili peppers.
- Chop the broccoli into florets.
- Julianne or slice the carrots.
- Slice the red bell pepper and the small onion.
3. Cook the Vegetables:
- In a large skillet or wok, heat 2 tablespoons of olive oil over medium-high heat.
- Add the chopped 1/2 onion and celery. Sauté for about 2-3 minutes until they begin to soften.
- Add the minced garlic, grated ginger, and sliced red hot chili peppers. Stir fry for another minute until fragrant.
- Add the broccoli florets, julienned carrots, and sliced red bell pepper. Stir fry for about 5-7 minutes until the vegetables are tender-crisp.
4. Combine & Season:
- Add the sliced small onion to the skillet or wok and cook for an additional 2 minutes.
- In a small bowl, mix the soy sauce and brown sugar until the sugar is dissolved.
- Pour the soy sauce mixture over the vegetables and toss to coat.
- Add the cooked mung beans. Stir everything together until well combined and heated through.
5. Finish the Dish:
- Sprinkle the stir fry with 2 teaspoons of sesame seeds.
- Season with salt and pepper to taste.
6. Serve:
- Divide the vegetable stir fry with mung bean noodles into serving bowls.
- Garnish with fresh cilantro or green onions if desired.

Tips:

- Soaking Mung Beans: To ensure the mung beans cook evenly and quickly, soak them in water for 4-6 hours or overnight before cooking. This also helps improve their digestibility.

- Cut Vegetables Uniformly: Try to chop the vegetables into similar sizes to ensure they cook evenly. This will also give the stir fry a cohesive texture.

- Control the Heat: Stir frying is all about maintaining high heat. Prepare all your ingredients before starting to cook, as the process moves quickly. Stir the vegetables continuously to prevent them from burning.

- Experiment with Sauces: Feel free to adjust the soy sauce and brown sugar according to your taste. You can also add a splash of rice vinegar or a drizzle of sesame oil for additional flavor.

- Add protein: If you want to add some protein to this vegetarian dish, consider adding tofu, tempeh, or even slices of cooked chicken or shrimp.

And there you have it—Vegetable Stir Fry Mung Bean Noodles! This dish is not only appetizing but also packed with nutrients from a range of fresh vegetables and protein-rich mung beans. Enjoy this wholesome, tasty meal on its own or pair it with your favorite side dish. Share it with family and friends and savor the wonderful blend of flavors.
