Lime Chicken, Peanut & Noodle Salad is a refreshing and hearty dish that combines the zesty flavors of lime, the crunch of fresh vegetables, and the protein of chicken and peanuts. This versatile salad can be enjoyed as a light lunch or dinner, and it's packed with nutrients and vibrant colors that are sure to please everyone's palate.

Ingredients:

Instructions:

1. Marinate the Chicken:
- Juice the lime and zest half of it.
- In a bowl, mix the lime zest and juice, grated ginger, minced garlic, and white wine.
- Add the chicken breasts to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
2. Cook the Rice Noodles:
- Cook the rice noodles according to the package instructions. Once cooked, drain and rinse with cold water to stop the cooking process. Set aside.
3. Cook the Chicken:
- Heat 1 tbsp of peanut oil in a large skillet over medium heat.
- Remove the chicken from the marinade (discard the marinade) and cook the chicken breasts for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and juices run clear.
- Once cooked, remove chicken from the skillet and let it rest for a few minutes before slicing it thinly.
4. Prepare the Vegetables:
- While the chicken is cooking, prepare the vegetables.
- Thinly slice the red pepper, cucumbers, and shallots. Julienne the carrot. Set these aside.
- Steam the Chinese peas for about 2-3 minutes until they are tender-crisp. Then, rinse under cold water to stop the cooking process.
5. Prepare the Dressing:
- In a small bowl, combine the fish sauce and sugar until the sugar dissolves.
- Add the remaining 1 tbsp of peanut oil and mix well.

6. Assemble the Salad:
- In a large salad bowl, combine the cooked rice noodles, steamed Chinese peas, sliced red pepper, julienned carrot, sliced cucumbers, sliced shallots, and mung beans.
- Add the sliced chicken on top.
- Pour the dressing over the salad and toss gently to combine.
7. Garnish and Serve:
- Sprinkle the chopped peanuts and chopped spearmint on top of the salad.
