Instructions:

1. Caramelize the Onions:
- Heat a non-stick skillet over medium heat. Add the thinly sliced onions and sauté for about 5 minutes, until they begin to soften.
- Add the 1/4 cup vegetable broth and 2 tbsp vinegar to the skillet. Continue to cook, stirring occasionally, until the onions are caramelized and golden brown, about 15-20 minutes. If the pan gets too dry, you can add a little more vegetable broth.
- Remove the caramelized onions from the skillet and set them aside.
2. Prepare the Pumpkin Filling:
- In a medium bowl, combine the 1 cup canned pumpkin, 2 tsp maple syrup, 1/2 tsp chili powder, 1/4 tsp paprika, 1/4 tsp rosemary, and a pinch of red pepper flakes. Mix until well combined.
3. Assemble the Quesadillas:
- Lay out the 4 tortillas on a clean surface.
- Spread a quarter of the pumpkin mixture evenly over one half of each tortilla.
- Layer the thinly sliced apple on top of the pumpkin mixture, dividing the apple slices evenly among the tortillas.
- Add a layer of the caramelized onions on top of the apple slices.
4. Cook the Quesadillas:
- Fold each tortilla in half, pressing down gently to seal.
- Heat the same skillet over medium heat (you can add a touch of oil if desired).
- Place the folded quesadillas in the skillet, cooking each one for about 2-3 minutes per side, or until the tortillas are golden brown and crispy.
5. Serve:
- Remove the quesadillas from the skillet and let them cool for a minute.
- Cut each quesadilla into wedges and serve warm.
