Lemon-basil zucchini-wrapped salmon fillets are a healthy, delicious, and visually appealing dish that combines the fresh flavors of basil and lemon with succulent salmon, all wrapped in thin slices of zucchini. This recipe is perfect for a special dinner or a nutritious weekday meal.

Instructions:

1. Preheat Oven:

3. Season the Salmon:
Pat the salmon fillets dry with a paper towel. Season both sides of the salmon with salt and pepper to taste. Place the fillets in a shallow dish and pour the olive oil-lemon mixture over them. Ensure each fillet is well coated. Let them marinate while you prepare the zucchini.
4. Prepare the Zucchini:
Use a vegetable peeler or mandoline to slice the zucchinis lengthwise into thin strips. Aim for about 16 strips in total.
5. Wrap the Salmon:
Lay 4 strips of zucchini on a work surface, slightly overlapping each other. Place a salmon fillet in the center of the zucchini strips. Place 4 basil leaves on top of the salmon. Fold the zucchini strips over the salmon to wrap it completely. Repeat this process for the remaining salmon fillets.
6. Bake:
Place the wrapped salmon fillets on a baking sheet lined with parchment paper or lightly greased. Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and the zucchini is tender.
7. Serve:
Once baked, remove the salmon fillets from the oven. Transfer them to a serving platter.
