Ingredients:

Instructions:

1. Preheat Oven and Prepare Tray:
Preheat your oven to 375°F (190°C). Line a baking tray with parchment paper or lightly grease with non-stick spray.
2. Prepare the Fennel:
- Remove the stalks and fronds from the fennel bulb and set aside a few fronds for garnish.
- Cut the fennel bulb into thin slices or wedges.
3. Prepare the Lemons:
- Zest one of the lemons to roughly yield 1 tbsp of zest. Set this aside.
- Slice both lemons into thin rounds.
4. Arrange on Tray:
- Spread the fennel slices evenly on the prepared baking tray.
- Lay half of the lemon slices over the fennel.
5. Prepare the Salmon:
- Place the salmon fillets on top of the lemon and fennel layers.
- Drizzle the salmon with 1 tbsp of lemon juice.
- Season the salmon with a dash of salt and a dash of black pepper.
6. Add Butter and Lemon Zest:
- Cut the 2 tbsp of salted butter into small pieces and dot them evenly over the salmon.
- Sprinkle the lemon zest over the salmon and fennel.
7. Top with Remaining Lemons:
- Lay the remaining lemon slices over the top of the salmon fillets for an extra punch of citrus flavor.
8. Bake:
- Place the baking tray in the preheated oven.
- Bake for about 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork. The fennel should be tender and slightly caramelized.
9. Garnish and Serve:
- Once baked, remove from the oven and let it rest for a couple of minutes.
- Garnish with the reserved fennel fronds.
- Serve the baked salmon with fennel and lemon warm, alongside your favorite side dishes.
