Instructions:

- In a heatproof bowl, melt 1/2 cup of dark chocolate (120g) and butter (110g) together over a pot of simmering water, stirring occasionally until smooth and glossy. Set aside to cool.

- In a clean, dry bowl, add the 3 egg whites (100g). Using an electric mixer, whisk the egg whites until they form soft peaks. Gradually add the sugar (150g), a tablespoon at a time, and continue to whisk until stiff peaks form and the meringue is glossy.
4. Combine Dry Ingredients:
- In another bowl, sift together the self-raising flour (72g) and dry cocoa powder (30g), then mix in the chopped hazelnuts (40g).
