Instructions:

1. Prepare the Ingredients:
- Chop the parsley and set aside.
- Mince the garlic cloves.
- Finely dice the carrots and onion.
- Dice the tomatoes.
- Grate the Parmesan cheese, if not pre-grated.
2. Make the Broth:
- In a large pot, heat 2 tsp of olive oil over medium heat.
- Add the minced garlic and finely chopped onion. Sauté until onions are translucent and garlic is fragrant, about 2-3 minutes.
- Add diced carrots and sauté for another 2 minutes.
- Pour in 2.5 cups of water and bring to a simmer.
- Dissolve the chicken broth cube into the simmering water.
- Add the diced tomatoes and let the mixture simmer for about 10 minutes, stirring occasionally.
3. Prepare the Polpetti:
- In a mixing bowl, combine the ground beef, half of the chopped parsley, grated Parmesan cheese, 1/4 tsp salt, and a dash of black pepper.
- Mix until well combined.
- Form small meatballs (polpetti) from the mixture, about the size of a cherry tomato.
4. Cook the Soup & Meatballs:
- Carefully add the meatballs to the simmering broth.
- Add 1 tsp red pepper flakes to the soup.
- Let the soup simmer gently for another 30 minutes, allowing the flavors to meld together.
5. Cook the Macaroni:
- While the soup is simmering with the meatballs, bring a separate pot of salted water to a boil.
- Add 1 cup of macaroni and cook according to the package instructions until al dente. Drain and set aside.
6. Combine Everything:
- Once the soup has finished simmering, add the cooked macaroni to the soup pot.
- Stir in an additional 2 tsp of olive oil.
- Adjust seasoning with more salt and pepper if needed.
7. Serve:
- Ladle the hot soup into bowls.
- Garnish with the remaining chopped fresh parsley.
- Serve immediately with an extra sprinkle of grated Parmesan cheese on top, if desired.
