- Add 1/2 teaspoon of salt to the pot.
- Bring the water to a boil over high heat, then reduce the heat to medium and simmer until the potatoes are fork-tender, about 15-20 minutes.

- While the potatoes are cooking, melt the butter in a large skillet over medium heat.
- Add the sliced leeks and fennel to the skillet, and sauté until they are soft and fragrant, about 8-10 minutes.
