- Peel and finely chop the 4 onions.
- Wash the cucumber, cut it in half lengthwise, and then slice it into thin half-moons.
- Thoroughly wash the 2 cups of spinach and chop it coarsely if the leaves are large.
3. Make the Dressing:
- In a small bowl, combine 1 tbsp olive oil, 1 tbsp vinegar, and 1/4 tsp salt.
- Whisk the mixture until it is well combined.

- In a large mixing bowl, add the cooled quinoa, chopped onions, cucumber slices, and spinach.
- Crumble the 2 oz feta cheese over the salad.
- Pour the dressing over the salad ingredients.
