Instructions:

1. Prepare the Dressing:
- In a small bowl, combine the vegetable oil, vinegar, honey, soy sauce, sesame oil, grated ginger root, and salt.
- Whisk together until the dressing is well blended and set aside.
2. Prepare the Tofu:
- Drain the tofu and pat dry with paper towels to remove excess moisture.
- Cut the tofu into bite-sized cubes.
3. Cook the Tofu: Optionally for Extra Crispiness:
- Heat a non-stick skillet over medium-high heat and add a little vegetable oil.
- Add the tofu cubes to the skillet in a single layer.
- Cook for about 3-5 minutes on each side or until golden brown and crispy.
- Remove from heat and let cool slightly.
4. Prepare the Vegetables:
- Wash and chop the lettuce.
- Peel and julienne or shred the carrots.
- Slice or julienne the cucumber.
5. Assemble the Salad:
- In a large bowl, combine the chopped lettuce, julienned carrots, and sliced cucumber.
