Instructions:

1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Place cupcake liners in a cupcake tray.
2. Prepare Ingredients:
Ensure your butter is softened. If it’s still firm, you can microwave it for 10-15 seconds on a low setting.
3. Cream the Butter and Sugar:
In a large mixing bowl, use a hand mixer or stand mixer to cream together the 1/2 cup (110g) of softened butter and 1/2 cup (100g) of sugar until the mixture is light and fluffy. This should take about 2-3 minutes on medium speed.
4. Add Eggs and Vanilla:
Crack the 2 eggs (100g) into the bowl one at a time, beating well after each addition. Add 1 tsp (4g) of vanilla extract and mix until combined.
5. Incorporate the Flour:
Gradually add the 1 cup (150g) of self-raising flour to the mixture. Mix on low speed to prevent the flour from flying out of the bowl. Mix until just combined to avoid overmixing, which can result in dense cupcakes.
6. Add the Milk:
Pour in the 2 tbsp (30g) of milk. Mix on low speed until the batter is smooth.
7. Fill the Cupcake Tray:
Evenly distribute the batter among the cupcake liners, filling each liner about 2/3 full. This allows room for the cupcakes to rise.
8. Bake:
Place the tray in the preheated oven and bake for 15-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
9. Cool:
Remove the cupcakes from the oven and allow them to cool in the tray for about 5 minutes. Then transfer the cupcakes to a wire rack to cool completely.
10. Serve or Decorate:
Once cooled, the plain cupcakes can be enjoyed as is or topped with your favorite frosting or decorations.
