- Finely chop the fresh parsley.
- Mince the garlic cloves.
- Halve the lemon.
2. Create the Feta Mixture:
- Add the chopped parsley and minced garlic to the bowl with the crumbled feta.
- Add the dried oregano and black pepper to the mixture.
- Squeeze the juice of half a lemon into the bowl. Be careful to avoid seeds dropping in.
- Mix well until all ingredients are evenly incorporated. The mixture should be flavorful and slightly creamy.
3. Prepare the Lettuce Leaves:
- Rinse the lettuce leaves thoroughly under cold water and pat them dry with paper towels.
- Lay each lettuce leaf flat on a clean surface. If the leaves are particularly large, you can trim off any thick stems to make rolling easier.
4. Assemble the Rolls:
- Place a generous spoonful of the feta mixture onto the lower third of each lettuce leaf.
- Tightly roll the leaf around the filling, folding in the sides as you go to enclose the feta mixture completely.
- Continue until all the lettuce leaves are filled and rolled.
