Instructions:

1. Prepare the Ingredients:
- Rinse and dry the spearmint leaves. Chop finely.
- Peel the carrots, then julienne them into thin, matchstick-like pieces.
- Wash the lettuce thoroughly under cold running water, then use a salad spinner or towels to dry. Tear into bite-sized pieces.
- Peel the cucumbers and slice them thinly.
2. Combine the Salad:
- In a large salad bowl, combine the torn pieces of lettuce with the julienned carrots and sliced cucumbers.
- Add the chopped spearmint to the salad mixture, tossing gently to evenly distribute the mint.
3. Prepare the Dressing:
- In a small bowl or a jar with a lid, combine 2 tablespoons of vinegar and 1/2 teaspoon of salt.
- Add the 1/4 cup of olive oil and whisk together until well blended. If using a jar, secure the lid tightly and shake vigorously to emulsify the dressing.
4. Dress the Salad:
- Drizzle the prepared dressing over the salad.
- Toss the salad gently but thoroughly to ensure all the ingredients are coated with the dressing.
