Instructions:

1. Preheat Oven: Preheat your oven to 400°F (200°C).
2. Prep the Pumpkin:
- In a large mixing bowl, combine the pumpkin cubes with 2 tablespoons (30g) of olive oil.
- Season with a pinch of salt and pepper, and toss until the pumpkin is well-coated.
- Spread the pumpkin cubes in a single layer on a baking sheet lined with parchment paper.
3. Roast the Pumpkin:
- Roast the pumpkin in the preheated oven for about 20-25 minutes or until tender and lightly browned, stirring halfway through.
4. Prepare the Tomatoes:
- While the pumpkin is roasting, place the halved cherry tomatoes in a medium bowl.
- Toss them with 1 tablespoon (15g) of olive oil, a pinch of salt, and pepper.
- Spread the tomatoes on another baking sheet lined with parchment paper.
5. Roast the Tomatoes:
- After the pumpkin has roasted for about 10 minutes, place the tomatoes in the oven.
- Roast the tomatoes for about 10-15 minutes, until they are soft and starting to caramelize.
