Instructions:

1. Prep the Cauliflower:
- Preheat your oven to 375°F (190°C).
- Cut the cauliflower into small florets.
- Bring a large pot of water to a boil and add 1 tsp of salt.
- Add the cauliflower florets and cook for about 5 minutes or until they are just tender.
- Drain the cauliflower and set it aside.
2. Cook the Sausage:
- Heat 1 tbsp of olive oil in a large skillet over medium heat.
- Add the Italian sausage, breaking it up with a spoon or spatula.
- Cook until the sausage is browned and cooked through, about 8-10 minutes.
- Remove the sausage from the skillet and set aside.
3. Prepare the Sauce:
- In the same skillet, add the finely chopped onions.
- Cook until the onions are soft and translucent, about 5-7 minutes.

- Stir in a dash of salt and a dash of black pepper.

4. Assemble the Casserole:
- In a large mixing bowl, combine the cooked cauliflower, sausage, and tomato sauce. Mix until all ingredients are evenly distributed.
