Instructions:

1. Cook the Rice:
- Rinse the brown rice under cold water until the water runs clear.
- Place the rice and 2 cups of water in a medium saucepan. Bring to a boil over high heat.
- Once boiling, reduce the heat to low, cover with a lid, and simmer for about 30-35 minutes, or until the water is absorbed and the rice is tender.
- Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes. Fluff with a fork before serving.
2. Prepare the Chicken:
- While the rice is cooking, season the chicken thighs with a dash of salt and black pepper.
- In a large skillet or wok, heat 2 teaspoons of vegetable oil over medium-high heat.
- Add the seasoned chicken thighs to the skillet and cook for about 5-7 minutes on each side until they are golden brown and fully cooked through (internal temperature should reach 165°F/74°C).
- Remove the chicken from the skillet and let it rest on a plate. Once slightly cooled, cut the chicken into bite-sized pieces.
3. Stir-Fry the Aromatics and Veggies:
- In the same skillet, add the remaining teaspoon of vegetable oil. Lower the heat to medium.
- Add the finely chopped ginger root, minced garlic, and chopped red hot chili pepper. Sauté for about 1-2 minutes until fragrant, stirring frequently to avoid burning.
- Add the sliced onion to the skillet and cook for another 3-4 minutes until it softens and becomes translucent.
4. Make the Sticky Sauce:
- In the skillet, add the ketchup, soy sauce, and honey. Stir well to combine.
- Return the cooked chicken pieces to the skillet and toss to coat evenly with the sauce.
- Continue to cook for another 2-3 minutes, allowing the sauce to thicken slightly and adhere to the chicken.
5. Add the Spinach:
- Gradually add the spinach to the skillet, tossing to combine. Cook for about 2 minutes, or until the spinach has wilted and is incorporated into the stir-fry.
6. Serve:
- Serve the sticky chicken stir-fry over the cooked brown rice.
