Ingredients:

1/2 cup cherry tomatoes

Instructions:

1. Preheat the Oven: Preheat your oven to 400°F (200°C).
2. Roast the Cherry Tomatoes:
- Place the cherry tomatoes on a baking sheet lined with parchment paper.
- Drizzle them with a little olive oil and season with a pinch of salt and pepper.
- Roast in the preheated oven for about 15-20 minutes, or until the tomatoes are soft and slightly caramelized. Remove from the oven and let cool.
3. Prepare the Green Beans:
- While the tomatoes are roasting, bring a pot of salted water to a boil.
- Add the green beans and blanch them for about 2-3 minutes, until they are bright green and tender-crisp.
- Drain the green beans and rinse under cold water to stop the cooking process. Set aside.
4. Toast the Pine Nuts:
- In a dry skillet over medium heat, toast the pine nuts until they are golden brown and fragrant, about 3-4 minutes. Stir frequently to prevent burning.
- Remove from the heat and let cool.
5. Prepare the Dressing:
- In a small bowl, mix together the sour cream, mayonnaise, finely chopped chives, and water until well combined.
- Season with salt and pepper to taste.
