1. Prepare the Tomatoes:
- Heat 1 tsp of olive oil in a small frying pan over medium heat.
- Add the cherry tomatoes and cook, stirring occasionally, until they begin to blister and soften, about 5 minutes.
- Add the balsamic vinegar and continue to cook for another 2 minutes, allowing the vinegar to reduce and coat the tomatoes. Remove from heat and set aside.
2. Cook the Bacon:
- In a separate large frying pan, cook the bacon strips over medium heat until crispy, about 5-7 minutes per side. Transfer the cooked bacon to a paper towel-lined plate to drain excess grease.
3. Prepare the Eggs:
- Wipe any excess bacon grease from the large frying pan and lightly coat it with a short spray of cooking spray oil.
- Crack the eggs into the pan and cook to your preference (sunny side up, over easy, or scrambled) for about 2-3 minutes.
4. Assemble the Baguettes:
- Slice the baguettes in half lengthwise. Optionally, you can lightly toast them in an oven or toaster for extra crunch.
- Drizzle the remaining 1 tsp of olive oil over the cut sides of the baguettes.
- Layer two strips of bacon on the bottom half of each baguette.
- Place an egg on top of the bacon.
- Spoon the balsamic tomatoes over the eggs.
5. Serve:
- Close the baguettes with the top halves and press gently.
- Serve immediately while hot.
