Instructions:

- Grease and line two 8-inch round cake pans with parchment paper.
2. Melt Chocolate & Butter:
- In a heatproof bowl, combine the dark chocolate and butter.
- Melt them together using a double boiler or microwave in 30-second intervals, stirring between each until smooth. Set aside to cool slightly.
3. Sugar & Eggs:
- In a large mixing bowl, beat the sugar (both white and brown) and eggs together until pale and fluffy.
- Gradually add the melted chocolate and butter mixture into the egg and sugar mixture, beating continuously until well combined.
4. Dry Ingredients:
- Sift the self-raising flour into the mixture and gently fold it in until no lumps remain. Be careful not to overmix.
5. Sour Cream:
- Gently fold in the light sour cream until the batter is smooth and well combined.
