Instructions:

2. Cook the Rice:
- In a medium pot, heat 2 tsp of olive oil over medium heat.
- Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
- Add the minced garlic, 1 tsp ground cumin, and 1 tsp turmeric powder. Cook for an additional 2 minutes until fragrant.
- Add the rinsed basmati rice and stir to coat the rice with the spice mixture.
- Pour in 2 cups of chicken gravy, bring to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes or until the rice is tender and the liquid is absorbed.
- Once cooked, remove from heat and let it sit covered for another 5 minutes. Fluff with a fork before serving.
- Stir in the roughly chopped 1/3 cup almonds.
