Instructions:

1. Preheat Your Oven:

- Wash the eggplants and slice them vertically about three-quarters of the way down, creating 5 or 6 'fans' per eggplant. Be careful not to cut all the way through the bottom so that they remain intact.
3. Season the Eggplant Fans:
- Gently spread the eggplant slices (fans) and sprinkle each layer with a bit of minced garlic and chopped fresh thyme. Drizzle with olive oil and lightly season with salt and pepper.
4. Bake the Eggplants:
- Place the seasoned eggplants in a baking dish. Pour 1 cup of water into the bottom of the dish to keep the eggplants moist. Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.
5. Prepare the Sauce and Toppings:
- While the eggplants are baking, halve the cherry tomatoes and set them aside.
- In a bowl, combine the pasta sauce, light sour cream, and grated parmesan cheese. Mix well until completely blended.
6. Add the Sauce and Cherry Tomatoes:
- After the initial 20 minutes of baking, remove the foil from the baking dish. Spoon the prepared sauce mixture over the eggplants, making sure it seeps into the slices. Place the halved cherry tomatoes around and on top of the eggplant fans.
