Ingredients:

1/2 cup white rice

Instructions:

1. Cook the Rice:
- Rinse the rice under cold water until the water runs clear.
- In a medium pot, add 1 cup of water and the rinsed rice.
- Bring to a boil over high heat.
- Once boiling, reduce the heat to low, cover, and let simmer for about 15-18 minutes or until the water is absorbed and rice is cooked.
- Remove from heat and let it sit, covered, for an additional 5 minutes. Fluff with a fork before serving.
2. Prepare the Sauce:
- In a small bowl, mix together the soy sauce, vinegar, and sugar. Stir until the sugar is completely dissolved. Set aside.
3. Cook the Vegetables and Cashews:
- Heat 2 tsp of olive oil in a large pan or wok over medium-high heat.
- Add the minced garlic and ginger, and stir-fry for about 30 seconds or until fragrant.
- Add the chopped chili pepper and continue to stir-fry for another 30 seconds.
- Add the sliced onions to the pan and stir-fry for about 3-5 minutes until they begin to soften.
- Add the mushrooms and continue to stir-fry for another 5 minutes or until they are cooked through and lightly browned.
4. Combine the Ingredients:
- Push the vegetables to one side of the pan, and add the remaining 2.5 tsp of olive oil.
- Add the chopped cashews to the open space in the pan and stir-fry for 1-2 minutes until they are golden brown.
- Mix the vegetables and cashews together in the pan.
- Pour the prepared sauce over the mixture, stirring well to combine and coat all the ingredients evenly. Cook for an additional 1-2 minutes until everything is heated through.
5. Serve:
- Divide the cooked rice into serving bowls or plates.
- Spoon the Gong Bao mix of mushrooms, cashews, and onions over the rice.
