- Zucchini: Slice the zucchini lengthwise into thin strips.
- Spearmint: Roughly chop the spearmint leaves.
2. Blanch the Broad Beans:
- Bring a pot of lightly salted water to a boil.
- Add the shelled broad beans and cook for about 2-3 minutes until tender.
- Drain the beans and immediately plunge them into a bowl of ice water to stop the cooking process. Drain again and set aside.
3. Grill the Vegetables:
- Preheat your grill to medium-high heat.
- In a large bowl, toss the asparagus and zucchini slices with 1 teaspoon of olive oil, ensuring they are lightly coated.
- Place the asparagus spears and zucchini slices on the grill. Grill for about 3-4 minutes per side, or until they are tender and have nice grill marks.
- Remove from grill and allow to cool slightly, then cut the asparagus into manageable pieces (2-inch lengths are suggested).
4. Assemble the Salad:
- In a large salad bowl, combine the grilled asparagus, grilled zucchini, and blanched broad beans.
- Add the chopped spearmint leaves.
5. Dress the Salad:
- Drizzle the 2 tablespoons of vinegar over the salad, gently tossing to coat all the ingredients evenly. Season with a little extra salt and black pepper if desired.
