Ingredients:

Instructions:

1. Prepare the Cherry Tomatoes:
- Wash the cherry tomatoes thoroughly.
- Cut off the tops of the tomatoes and, using a small spoon, gently scoop out the seeds and pulp. Set the tomato shells aside.
- Finely chop the tomato tops and pulp.
2. Cook the Filling:
- Heat 1 tablespoon of olive oil in a medium skillet over medium heat.
- Add the finely chopped onion and sauté until soft and translucent, about 5-7 minutes.
- Stir in the pine nuts and cook for another 2-3 minutes until they are lightly toasted.
3. Add the Rice and Spices:
- Add the white rice to the skillet and stir to coat it with the oil and onions.
- Pour in 1.5 cups of water and add the ground cumin, allspice, salt, and pepper to taste.
- Bring the mixture to a simmer, then reduce the heat to low, cover, and cook for about 15-20 minutes, or until the rice is tender and has absorbed the water.
4. Stuff the Tomatoes:
- Preheat your oven to 350°F (175°C).
- Once the rice mixture is cooked, let it cool slightly before stuffing the tomato shells.
- Spoon the rice mixture into each tomato, packing it gently but firmly.
- Place the stuffed tomatoes in a baking dish.
5. Bake:
- Pour 1/3 cup of vegetable broth into the bottom of the baking dish to keep the tomatoes moist during baking.
- Cover the dish with foil and bake in the preheated oven for 25-30 minutes, or until the tomatoes are tender and the filling is heated through.
6. Serve:
- Remove the baking dish from the oven and let the tomatoes cool slightly before serving.
- Serve the tomato dolmas warm, garnished with fresh herbs if desired.
