- While the potatoes are parboiling, in a small bowl, combine the lemon zest and minced garlic. This will be your herb mixture.
3. Coat the Fish:
- Pat the fish fillets dry with a paper towel.
- Lightly coat each fillet with flour, ensuring an even layer. Shake off any excess flour.
4. Crust the Fish:
- Press the herb mixture onto the top of each fillet, using your fingers to press it in and ensure it sticks.
5. Cook the Fish:
- Place the fish fillets on a greased, oven-safe baking dish.
