3. Prepare the Sauce:
- In the same skillet, add the remaining 1/4 cup (55g) of butter and melt over medium heat.
- Add the minced garlic and cook for about 1 minute, until fragrant.
- Stir in the capers and lemon zest, cooking for an additional 2 minutes.
4. Combine and Cook:
- Add the sliced red onion and diced tomato to the skillet and cook for about 3-4 minutes, until the vegetables start to soften.
- Stir in the sliced olives and cook for another 2-3 minutes.
5. Add Chicken and Combine:
- Return the chicken breasts to the skillet, nestling them into the sauce and vegetables.
- Spoon the sauce over the chicken to ensure it is well coated and cook for another 3-4 minutes, allowing the flavors to meld together.
6. Finish and Serve:
- Remove the skillet from heat. Sprinkle the crumbled feta cheese and chopped fresh parsley over the chicken and sauce.
