Smashed chat potatoes with garlic & herb cheese and prosciutto is a delightful and aromatic dish that combines the creamy texture of ricotta cheese with the crispy, savory flavors of prosciutto. Instructions:

1. Preheat Oven:
Preheat your oven to 200°C (392°F). Line a baking sheet with parchment paper.
2. Prepare Potatoes:
Wash the potatoes thoroughly and place them in a large pot. Fill the pot with enough water to cover the potatoes and bring to a boil over high heat. Once boiling, reduce the heat to medium and cook for about 15-20 minutes, or until the potatoes are fork-tender.
3. Smash the Potatoes:
Drain the potatoes and let them cool slightly. Place the potatoes on the prepared baking sheet. Using the back of a fork or a potato masher, gently press down on each potato to flatten them slightly without breaking them apart.
4. Season and Roast:
Drizzle the smashed potatoes with olive oil, ensuring they are well-coated. Sprinkle with the minced garlic, fresh parsley, fresh thyme, and fresh basil. Season with salt and pepper to taste.
5. Roast:
Place the baking sheet in the preheated oven and roast the potatoes for about 25-30 minutes, or until they are golden and crispy.
6. Prepare Garlic & Herb Cheese:
While the potatoes are roasting, mix the ricotta cheese with a little salt and pepper in a small bowl. Optionally, you can add a bit of chopped herbs for extra flavor.
7. Crisp the Prosciutto:
Heat a small non-stick pan over medium heat. Fry the prosciutto slices for about 2-3 minutes on each side, or until they are crispy. Remove from the pan and let them cool on a paper towel.
