Instructions:

1. Prepare the Pork Tenderloin:
1.1. Preheat your oven to 375°F (190°C).
1.2. In a small bowl, mix the red pepper spice, salt, and spice mix.
1.3. Rub the spice mixture evenly over the pork fillet.
1.4. In a large oven-proof skillet, heat 1 tbsp of olive oil over medium-high heat.
1.5. Sear the pork fillet on all sides until it develops a golden-brown crust, about 2-3 minutes per side.
1.6. Transfer the skillet to the preheated oven and roast the pork for about 20-25 minutes or until the internal temperature reaches 145°F (63°C).
1.7. Remove the pork from the oven and let it rest for 5-10 minutes before slicing.
2. Prepare the Avocado Salsa:
2.1. In a large bowl, combine the finely chopped pineapple, tomatoes, avocado, and onion.
2.2. Add the chopped coriander leaves and finely chopped jalapeno pepper to the bowl.
2.3. Pour in the lime juice, orange juice, and 2 tbsp of olive oil.
2.4. Gently mix all the ingredients together until well combined.
2.5. Taste and adjust salt if necessary.
3. Serve:
