3. Add Vinegar and Sugar:
- Sprinkle the sugar evenly over the onions.
- Pour the vinegar into the skillet, and let it simmer for 2-3 minutes, until the mixture is slightly thicker and caramelized. Stir well to make sure the onions are coated.
4. Prepare the Puff Pastry:
- While the onion mixture is being prepared, cut the puff pastry sheets into circles slightly larger than the diameter of your skillet. You may need to overlap and press together two sheets if your skillet is large.
5. Assemble the Tarte Tatin:
- Remove the skillet from the heat. Allow the caramelised onion mixture to cool slightly.
