Instructions:

1. Cook the Couscous:
- In a small pot, bring 1/2 cup of water to a boil.
- Once boiling, remove from heat, add the 1/3 cup couscous, cover, and let sit for 5 minutes or until the liquid is absorbed.
- Fluff the couscous with a fork and set aside to cool.
2. Prepare the Chicken:
- Preheat a grill or grill pan over medium-high heat.
- In a small bowl, combine 1 tbsp of olive oil, 1 tsp of minced garlic, 1/4 tsp of salt, and 1/4 tsp of white pepper to make a marinade.
- Rub the marinade all over the chicken breasts.
- Grill the chicken breasts for about 6-7 minutes on each side, or until fully cooked and no longer pink inside. (Internal temperature should reach 165°F/74°C)
- Remove the chicken from the grill and let it rest for a few minutes before slicing into thin strips.

- In a small bowl, whisk together the remaining 2 tbsp of olive oil, 1 tsp of minced garlic, 1/4 cup of lemon juice, fresh parsley, and spearmint until well combined.

- Spread a spoonful of cooked couscous in the center of the tortilla.
