Instructions:

1. Prepare the Vegetables:
- Peel and grate the carrot.
- Grate the zucchini.
- Finely chop the scallions.
- Mince the garlic cloves.
- Peel and cube the potatoes.
2. Blanch the Potatoes:
- Bring a pot of water to a boil, add the cubed potatoes, and cook for about 5 minutes until slightly tender. Drain and let them cool down.
3. Prepare the Beef Mixture:
- In a large mixing bowl, combine the ground beef, grated carrot, grated zucchini, finely chopped scallions, minced garlic, grated ginger root, egg, and finely chopped almonds.
- Add 1/3 cup of Massaman curry paste to the mixture. Mix well until all ingredients are evenly distributed.
4. Form the Skewers:
- Preheat your grill or grill pan to medium-high heat.
- Form the beef mixture into oblong meatballs around wooden or metal skewers. Ensure they are compact and well-shaped to stay on the skewers.
5. Grill the Skewers:

- In a small saucepan, combine the coconut milk, lemon juice, fish sauce, sugar, lime zest, lime juice, and finely chopped peanuts.
- Heat the mixture over medium heat, stirring frequently, until it thickens slightly and becomes fragrant (about 5-7 minutes).
7. Optional Potato Skewers:
- Thread the blanched potato cubes onto separate skewers.
- Brush them lightly with peanut oil.
- Grill the potato skewers for about 5-7 minutes, turning occasionally, until they are golden and fully cooked.
8. Serve:
- Transfer the cooked beef skewers to a serving platter.
- Drizzle the prepared Massaman sauce over the skewers or serve it on the side for dipping.
- If made, add the grilled potato skewers to the platter.
9. Garnish and Enjoy:
- Garnish the dish with extra chopped peanuts, fresh lime wedges, or additional chopped scallions for extra flavor.
