Instructions:

1. Prepare the Bean Mixture
- Heat 1 tbsp vegetable oil in a large skillet over medium heat.
- Add the finely chopped onion and cook, stirring occasionally, until it becomes translucent (about 5-7 minutes).
- Add the minced garlic and cook for another 1-2 minutes until fragrant.
2. Spice the Beans
- Add 1 tsp ground cumin, 2 tsp paprika, and 1 tbsp water to the skillet.
- Stir in the rinsed and drained kidney beans, and season with a dash of salt and black pepper.
- Use a fork or potato masher to mash the beans until you achieve a refried bean consistency. Cook for an additional 2-3 minutes, stirring constantly. Remove from heat.
3. Assemble the Quesadillas
- Lay out the 8 tortillas on a clean surface.
- Spread an even layer of the refried bean mixture onto one half of each tortilla.
- Sprinkle grated cheddar cheese and chopped coriander leaves over the bean mixture.
- Fold the tortillas in half to enclose the filling.
4. Cook the Quesadillas
- Heat a large, non-stick skillet over medium heat (no need to add extra oil).
- Place the folded quesadillas in the skillet, one at a time or as many as fit comfortably, and cook for 2-3 minutes on each side, or until the tortillas are golden brown and the cheese has melted. Use a spatula to flip them carefully.
5. Serve
- Cut the quesadillas into wedges and arrange them on a serving platter.
- Serve with salsa sauce and sour cream on the side for dipping.
