Instructions:

1. Preheat your oven: Begin by preheating your oven to 350°F (175°C). Line a 9x13 inch (23x33 cm) baking dish with parchment paper or grease it lightly to prevent sticking.
2. Cook the quinoa: Rinse the quinoa under cold water to remove any bitterness. In a saucepan, combine the quinoa with 4 cups (960ml) of water. Bring it to a boil, then reduce the heat to low and cover. Cook for about 15 minutes or until the quinoa has absorbed all the water and is tender. Once cooked, fluff the quinoa with a fork and set aside to cool.
3. Prepare the dry ingredients: In a large mixing bowl, combine the all-purpose white wheat flour, brown sugar, baking powder, and cinnamon. Mix well to ensure the baking powder and cinnamon are evenly distributed.
4. Add the fruits and zest: Stir in the chopped dried apricots, dried cranberries, and lemon zest into the dry ingredients. Mix until the fruits and zest are evenly distributed throughout the mixture.
5. Combine wet ingredients: In a medium bowl, mix the melted butter, honey, milk, and beaten eggs until well combined.
6. Incorporate the quinoa: Add the cooled quinoa to the bowl of wet ingredients, mixing well to ensure the quinoa is evenly coated.
