- Drain the potatoes and return them to the pot. Mash the potatoes until smooth. Set aside.
2. Prepare the Cabbage and Leek:
- While the potatoes are cooking, finely shred the cabbage and thinly slice the leek.
- In a large skillet, melt the butter over medium heat.
- Add the sliced leek and cook until softened and fragrant, about 5 minutes.
- Add the shredded cabbage to the skillet and continue to cook, stirring occasionally, until the cabbage is wilted and tender, about 5-7 more minutes.
3. Combine Ingredients:
- Add the mashed potatoes to the skillet with the cooked cabbage and leek.
- Stir gently to combine all ingredients evenly. Season with salt and pepper to taste.
4. Cook the Bubble and Squeak:
- Press the mixture down into the skillet to create a flat, even layer.
- Cook over medium heat without stirring, allowing the mixture to brown on the bottom, about 8-10 minutes.
- Carefully flip the mixture over in sections (it’s okay if it breaks up) and cook the other side until browned and crispy, another 5-7 minutes.
5. Serve:
- Once both sides are browned and crispy, remove from heat and transfer to a serving dish.
- Serve hot as a delicious side dish or even as a main course with a fried egg on top.
